Instructions
- Heat Oil and Cook Hot Dogs: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced hot dogs and cook for 3–4 minutes until they are lightly browned. Remove the hot dogs from the pan and set them aside.
- Sauté Onion and Garlic: Add the remaining tablespoon of vegetable oil to the pan. Sauté the diced onion and minced garlic for about 1 minute, until fragrant and slightly softened.
- Cook Peas and Carrots: Add the frozen peas and carrots to the pan. Cook for 2–3 minutes until they are heated through and tender.
- Scramble the Eggs: Push the vegetables to one side of the pan. Crack the two eggs into the empty side and scramble them until fully cooked.
- Stir-Fry the Rice: Add the cold cooked rice to the pan. Stir-fry for 3–4 minutes, breaking up any clumps and mixing well with the vegetables and eggs.
- Combine Ingredients and Season: Return the cooked hot dogs to the pan. Pour in the soy sauce and sesame oil, then sprinkle with black pepper. Toss everything together and cook for another 1–2 minutes, letting the flavors meld.
- Garnish and Serve: Remove from heat and garnish with the sliced green onions. Serve the fried rice hot.
