Description
Korean Braised Potatoes, also known as Gamja Jorim, is a beloved Korean side dish featuring tender potato cubes simmered in a sweet and savory soy-based glaze. The potatoes are cooked until soft and infused with the rich flavors of garlic, soy sauce, and sesame oil, then finished with a glossy reduction and sprinkled with sesame seeds for a delightful texture and taste.
Ingredients
Potatoes
- 3 medium potatoes, peeled and cut into bite-sized cubes
Sauce & Seasoning
- 1 tablespoon oil
- 2 tablespoons soy sauce
- 1 tablespoon sugar
- 1 tablespoon honey or corn syrup
- 1 cup water
- 1 clove garlic, minced
- 1 teaspoon sesame oil
- Sesame seeds, for garnish
Instructions
- Sauté Potatoes: Heat 1 tablespoon of oil in a pan over medium heat. Add the peeled and cubed potatoes and sauté lightly for a few minutes until they start to slightly brown but are not fully cooked through.
- Add Sauce Mixture: Pour in 1 cup of water, 2 tablespoons soy sauce, 1 tablespoon sugar, and the minced garlic. Stir gently to combine all ingredients.
- Simmer Potatoes: Bring the mixture to a boil, then reduce the heat to low and let it simmer. Cook uncovered until the potatoes become tender, approximately 15 minutes, stirring occasionally but gently to avoid breaking the potatoes apart.
- Reduce Sauce: Increase the heat to medium-high to allow the sauce to reduce and thicken. Stir carefully and cook until the sauce is glossy and clings to the potatoes, about 3-5 minutes.
- Finish and Garnish: Turn off the heat, then stir in 1 teaspoon of sesame oil for a fragrant finish. Transfer to a serving dish and sprinkle toasted sesame seeds on top for garnish.
- Serve: Serve the braised potatoes warm or at room temperature as a savory and sweet side dish to your Korean meal.
Notes
- Cut potatoes into uniform bite-sized cubes to ensure even cooking.
- Do not stir excessively during simmering to keep the potato cubes intact and prevent them from breaking down.
- You can substitute honey with corn syrup based on preference or availability.
- Adjust sweetness by varying sugar and honey quantities according to taste.
