Ingredients
For the Chicken
- 1½ lbs boneless, skinless chicken breasts, cut into 1½-inch pieces
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp honey
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp dried oregano
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
For the Kabobs
- 2 red bell peppers, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 small red onion, cut into chunks
- 8 wooden or metal skewers
- Fresh parsley or cilantro, for garnish
- Lemon wedges, for serving
Instructions
- Soak Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.
- Prepare Marinade: In a large bowl, whisk together olive oil, lemon juice, honey, garlic powder, smoked paprika, dried oregano, onion powder, salt, and black pepper to create a flavorful marinade.
- Marinate Chicken: Add the chicken pieces to the marinade and toss until evenly coated. Cover the bowl and refrigerate for 20–30 minutes to let the flavors infuse.
- Assemble Kabobs: Thread the marinated chicken, red and green bell pepper chunks, and red onion pieces alternately onto the skewers for a balanced distribution of flavors and colors.
- Preheat Grill: Heat the grill to medium-high, approximately 400–425°F (200–220°C), ensuring it’s ready for cooking.
- Grill Kabobs: Place the skewers on the grill and cook for 10–14 minutes, turning every few minutes to ensure even cooking and a nice char. Grill until the chicken reaches an internal temperature of 165°F (74°C).
