Description

A light and nutritious Japanese-inspired stir-fried soba dish packed with fresh vegetables and tossed in a savory soy-based sauce. This vegan-friendly meal is quick, flavorful, and perfect for a healthy lunch or dinner.

Ingredients

Noodles

  • 200 g soba noodles

Vegetables

  • 1 carrot, julienned
  • 1 bell pepper, sliced
  • 1 cup cabbage, shredded
  • 1/2 cup snap peas
  • 2 cloves garlic, minced

Sauce

  • 1 tablespoon soy sauce
  • 1 tablespoon mirin
  • 1 teaspoon sesame oil
  • 1 teaspoon maple syrup or sugar
  • 1 tablespoon vegetable oil

Garnish

  • Sesame seeds for garnish

Instructions

  1. Cook the Soba Noodles: Cook soba noodles according to package instructions, then drain and rinse under cold water to stop the cooking process and remove excess starch.
  2. Heat the Oil: Heat vegetable oil in a pan or wok over medium-high heat to prepare for stir-frying.
  3. Sauté Garlic: Add minced garlic to the pan and sauté until fragrant, about 30 seconds to 1 minute, to infuse the oil with flavor.
  4. Cook the Vegetables: Add julienned carrot, sliced bell pepper, shredded cabbage, and snap peas to the pan. Stir-fry the vegetables for 4 to 5 minutes until they are tender-crisp.
  5. Add Soba Noodles: Add the cooked soba noodles to the pan with the vegetables and toss well to combine all ingredients evenly.
  6. Add Sauce Ingredients: Pour in soy sauce, mirin, sesame oil, and maple syrup or sugar. Stir everything thoroughly to coat the noodles and vegetables in the savory sauce.
  7. Final Cook: Cook the combined ingredients for another 2 to 3 minutes, allowing the flavors to meld and the dish to heat through completely.
  8. Garnish and Serve: Remove from heat, garnish with sesame seeds, and serve the stir-fried soba hot for a delicious and healthy meal.

Notes

  • Use tamari instead of soy sauce for a gluten-free option.
  • Add tofu or mushrooms for extra protein.
  • Do not overcook soba noodles to keep their texture firm and pleasant.
