Description

A bold and creamy twist on chicken thighs—stuffed or topped with spicy jalapeños, creamy cheeses, and savory bacon for an indulgent and flavorful dinner that’s perfect for a low-carb or keto diet.

Ingredients

Chicken and Seasoning

  • 6 chicken thighs
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Cheese Mixture

  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled

Topping

  • 2 jalapeños, sliced
  • 1 tbsp olive oil

Instructions

  1. Preheat Oven: Preheat your oven to 190°C (375°F) to ensure it’s ready for baking the chicken thighs evenly.
  2. Prepare Cheese Mixture: In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, and crumbled cooked bacon until well blended to create a rich and creamy filling and topping.
  3. Season Chicken: Pat the chicken thighs dry and season both sides evenly with salt and black pepper to enhance the flavors.
  4. Assemble Chicken: Spread or stuff the cheese mixture onto or inside each chicken thigh, depending on your preference for stuffed or topped chicken.
  5. Add Jalapeños: Place sliced jalapeños on top of the cheese-covered chicken thighs, adding a spicy kick to each piece.
  6. Drizzle Olive Oil: Drizzle olive oil evenly over the assembled chicken thighs to help crisp the skin and add flavor during baking.
  7. Bake: Place the chicken thighs on a baking tray and bake in the preheated oven for 35 to 40 minutes, or until the chicken is cooked through and the cheese mixture is bubbly and browned around the edges.
  8. Serve: Remove from the oven and serve hot for an indulgent and spicy dinner experience.

Notes

  • Remove jalapeño seeds before slicing to reduce heat if desired.
  • Add extra shredded cheese on top before baking for a cheesy crust.
