Description

A creamy, cheesy chicken casserole loaded with spicy jalapeños, crispy bacon, and melted cheddar cheese. Inspired by classic jalapeño poppers, this dish is a rich, comforting, and flavorful main course that combines the heat of peppers with savory chicken and a luscious cheese sauce.

Ingredients

Chicken Mixture

  • 2 cups cooked chicken (shredded)
  • 4 oz cream cheese
  • 1/2 cup sour cream
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 3 jalapeños (sliced)
  • 1/2 cup shredded cheddar cheese

Topping

  • 1/2 cup shredded cheddar cheese
  • 4 slices bacon (cooked and crumbled)

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F) to prepare for baking.
  2. Prepare Cheese Mixture: In a large bowl, combine the cream cheese, sour cream, garlic powder, salt, and pepper until smooth and well blended.
  3. Add Chicken and Jalapeños: Stir the shredded cooked chicken, sliced jalapeños, and half of the shredded cheddar cheese into the cream cheese mixture, mixing thoroughly.
  4. Transfer to Baking Dish: Pour and spread the chicken and cheese mixture evenly into a baking dish.
  5. Add Toppings: Sprinkle the remaining cheddar cheese over the top, then evenly distribute the crumbled cooked bacon on top of the cheese.
  6. Bake: Place the baking dish in the preheated oven and bake for 20 to 25 minutes, or until the casserole is bubbly and the cheese on top is golden and melted.
  7. Rest and Serve: Remove from oven and let the casserole rest for a few minutes before serving to allow it to set slightly and cool down for safe eating.

Notes

  • For less heat, remove the seeds from the jalapeños before slicing.
  • Add a layer of breadcrumbs on top before baking for an extra crunchy crust.
  • This casserole pairs wonderfully with rice, crusty bread, or a fresh green salad.
