Description
A creamy, cheesy chicken casserole loaded with spicy jalapeños, crispy bacon, and melted cheddar cheese. Inspired by classic jalapeño poppers, this dish is a rich, comforting, and flavorful main course that combines the heat of peppers with savory chicken and a luscious cheese sauce.
Ingredients
Chicken Mixture
- 2 cups cooked chicken (shredded)
- 4 oz cream cheese
- 1/2 cup sour cream
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 3 jalapeños (sliced)
- 1/2 cup shredded cheddar cheese
Topping
- 1/2 cup shredded cheddar cheese
- 4 slices bacon (cooked and crumbled)
Instructions
- Preheat Oven: Preheat your oven to 180°C (350°F) to prepare for baking.
- Prepare Cheese Mixture: In a large bowl, combine the cream cheese, sour cream, garlic powder, salt, and pepper until smooth and well blended.
- Add Chicken and Jalapeños: Stir the shredded cooked chicken, sliced jalapeños, and half of the shredded cheddar cheese into the cream cheese mixture, mixing thoroughly.
- Transfer to Baking Dish: Pour and spread the chicken and cheese mixture evenly into a baking dish.
- Add Toppings: Sprinkle the remaining cheddar cheese over the top, then evenly distribute the crumbled cooked bacon on top of the cheese.
- Bake: Place the baking dish in the preheated oven and bake for 20 to 25 minutes, or until the casserole is bubbly and the cheese on top is golden and melted.
- Rest and Serve: Remove from oven and let the casserole rest for a few minutes before serving to allow it to set slightly and cool down for safe eating.
Notes
- For less heat, remove the seeds from the jalapeños before slicing.
- Add a layer of breadcrumbs on top before baking for an extra crunchy crust.
- This casserole pairs wonderfully with rice, crusty bread, or a fresh green salad.
