Ingredients

Beef and Seasoning

  • 1 ½ lb beef stew meat, cubed
  • Salt & pepper, to taste
  • 1 tsp thyme
  • 1 tsp Worcestershire sauce

Vegetables

  • 1 onion, chopped
  • 3 carrots, sliced
  • 2 potatoes, diced

Liquids and Others

  • 1 tbsp olive oil
  • 3 cups beef broth
  • 2 tbsp tomato paste


Instructions

  1. Brown the Beef: Set your Instant Pot to the sauté setting. Add the olive oil to the pot and once hot, add the cubed beef stew meat. Brown the beef on all sides to lock in flavor, which should take about 5-7 minutes.
  2. Sauté Onion and Tomato Paste: Add the chopped onion and tomato paste to the pot with the beef. Cook while stirring for about 2 minutes until the onions are softened and the paste is well incorporated.
  3. Add Liquid and Seasonings: Pour in the beef broth and add the Worcestershire sauce, thyme, salt, and pepper. Stir everything together to combine.
  4. Add Vegetables and Cook Under Pressure: Add the sliced carrots and diced potatoes to the pot. Secure the Instant Pot lid, set the valve to sealing, and select the ‘Stew’ setting or manually set to high pressure for 35 minutes.
  5. Release Pressure and Serve: After cooking, allow the Instant Pot to naturally release pressure for 10 minutes, then carefully perform a quick release to release any remaining steam. Open the lid, stir the stew, and serve hot.
