Description

Tender, fall-off-the-bone beef short ribs cooked quickly in the Instant Pot. Rich, flavorful, and perfect for a comforting meal without the long wait.

Ingredients

Beef Short Ribs

  • 2 lbs beef short ribs
  • Salt and pepper to taste

For Cooking

  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 2 tbsp soy sauce (use gluten-free soy sauce for gluten-free option)
  • 1 tbsp tomato paste
  • Optional: thyme or rosemary (to taste)

Instructions

  1. Season Ribs: Season the beef short ribs generously with salt and pepper on all sides to enhance the flavor during cooking.
  2. Sauté Ribs: Set the Instant Pot to sauté mode and heat 1 tablespoon of olive oil. Brown the short ribs on all sides until they develop a rich, golden crust. Remove the ribs and set aside.
  3. Sauté Aromatics: In the same pot, sauté the chopped onion and minced garlic until fragrant and translucent, about 2-3 minutes.
  4. Add Liquids and Flavor: Stir in the tomato paste, beef broth, and soy sauce to the pot, scraping up any browned bits from the bottom to add depth to the sauce. Add thyme or rosemary if using.
  5. Cook Under Pressure: Return the browned short ribs to the Instant Pot, sealing them in the liquid mixture. Close the lid securely and set the Instant Pot to cook on high pressure for 35 to 40 minutes.
  6. Pressure Release: Once cooking is complete, allow the pressure to release naturally for 10 to 15 minutes, then carefully release any remaining pressure manually.
  7. Serve: Remove the ribs from the pot and serve with the rich sauce spooned over the top. Optionally, skim any excess fat from the sauce. These ribs pair beautifully with mashed potatoes or rice.

Notes

  • Skim excess fat from the sauce after cooking for a leaner dish.
  • Serve the beef short ribs with mashed potatoes or rice for a complete meal.
  • For gluten-free diet, use gluten-free soy sauce.
