- 2 tbsp chopped cilantro
- 1 small avocado, diced
- Sour cream, for serving (optional)
Instructions
- Preheat and Prepare Tortilla Cups: Preheat your oven to 375°F (190°C). Cut the small flour tortillas into rounds and press each round into a greased mini muffin tin cup to form a small tortilla cup shape.

- Add Salsa to Tortilla Cups: Remove the crispy tortilla cups from the oven and evenly divide ½ cup of salsa among the cups, sprinkling a little into each one.
- Fill Cups with Egg Mixture: Carefully pour the whisked egg mixture into each tortilla cup over the salsa, filling them almost to the top.
- Top with Cheese: Sprinkle ½ cup of shredded cheddar or Monterey Jack cheese evenly over each filled tortilla cup.
- Bake Until Set: Return the muffin tin to the oven and bake for 12 to 15 minutes or until the eggs are fully set and the cheese is melted and lightly golden.
- Garnish and Serve: Remove from the oven and garnish each mini bite with 2 tablespoons of chopped fresh cilantro and diced avocado. Serve warm with sour cream on the side, if desired.
Notes
- For added protein and heartiness, consider adding cooked chorizo or black beans to the filling.
- Using mini muffin tins creates perfectly bite-sized appetizers ideal for parties and brunch gatherings.
