Description

These Huevos Rancheros Mini Savoury Bites transform the classic Mexican breakfast into delightful, bite-sized appetizers. Crispy flour tortilla cups are filled with a seasoned egg mixture, salsa, melted cheddar or Monterey Jack cheese, and fresh toppings like cilantro and avocado, making them a perfect flavorful and crowd-pleasing brunch or breakfast party dish.


Ingredients

Base

  • 6 small flour tortillas

Egg Mixture

  • 4 large eggs
  • ¼ tsp salt
  • ¼ tsp black pepper

Fillings & Toppings

  • ½ cup salsa
  • ½ cup shredded cheddar or Monterey Jack cheese
  • 2 tbsp chopped cilantro
  • 1 small avocado, diced
  • Sour cream, for serving (optional)


Instructions

  1. Preheat and Prepare Tortilla Cups: Preheat your oven to 375°F (190°C). Cut the small flour tortillas into rounds and press each round into a greased mini muffin tin cup to form a small tortilla cup shape.
  2. Bake Tortilla Cups: Place the muffin tin in the oven and bake for 8 to 10 minutes until the tortilla cups are lightly crisp and hold their shape.
  3. Mix the Eggs: In a bowl, whisk together the 4 large eggs with ¼ teaspoon of salt and ¼ teaspoon of black pepper until well combined and slightly frothy.
  4. Add Salsa to Tortilla Cups: Remove the crispy tortilla cups from the oven and evenly divide ½ cup of salsa among the cups, sprinkling a little into each one.
  5. Fill Cups with Egg Mixture: Carefully pour the whisked egg mixture into each tortilla cup over the salsa, filling them almost to the top.
  6. Top with Cheese: Sprinkle ½ cup of shredded cheddar or Monterey Jack cheese evenly over each filled tortilla cup.
  7. Bake Until Set: Return the muffin tin to the oven and bake for 12 to 15 minutes or until the eggs are fully set and the cheese is melted and lightly golden.
