Description

Master the art of sautéing chicken to achieve golden, tender, and juicy results every time. This straightforward technique works beautifully with boneless, skinless chicken breasts or thighs, making it perfect for quick and flavorful meals.

Ingredients

Chicken

  • 2 chicken breasts or thighs (boneless, skinless)

Seasonings and Oils

  • 12 tbsp olive oil or butter
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder (optional)
  • 1/2 tsp paprika (optional)

Instructions

  1. Prep the chicken: Pat the chicken dry with paper towels and pound to an even thickness to ensure uniform cooking throughout.
  2. Season well: Sprinkle salt, black pepper, garlic powder, and paprika evenly on both sides of the chicken pieces.
  3. Heat the pan: Place a skillet over medium-high heat and add olive oil or butter, allowing it to heat until shimmering.
  4. Sear the chicken: Add the chicken to the hot skillet and cook undisturbed for 5–7 minutes until the outside is golden brown.
  5. Flip once: Turn the chicken over and cook for another 5–7 minutes until fully cooked through.
  6. Check doneness: Verify the internal temperature has reached 75°C (165°F) for safe consumption.
  7. Rest: Remove the chicken from the skillet and let it rest for 5 minutes before slicing to retain juices.

Notes

  • Do not overcrowd the pan; cook in batches if necessary to maintain even cooking and browning.
  • Avoid flipping the chicken multiple times; a single flip ensures good sear and moisture retention.
  • For extra flavor, add minced garlic, fresh herbs, or a little lemon juice after cooking.
