Ingredients
Chicken
- 700 g boneless, skinless chicken breasts or thighs, cut into bite-size pieces
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
Vegetables
- 400 g fresh green beans, trimmed
- 3 cloves garlic, minced
- 2 green onions, sliced
Sauce
- ¼ cup honey
- 2 tbsp Sriracha sauce
- 2 tbsp low-sodium soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp fresh ginger, grated
Other Ingredients
- 2 tbsp olive oil
- 1 tbsp cornstarch
- 2 tbsp water
- 1 tsp sesame seeds, for garnish
Instructions
- Season the Chicken: Season the bite-size chicken pieces evenly with paprika, salt, and black pepper to enhance the flavor.
- Prepare the Sauce: In a small bowl, whisk together honey, Sriracha sauce, low-sodium soy sauce, rice vinegar, sesame oil, and grated fresh ginger until well combined.
- Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 6 to 8 minutes, stirring occasionally, until it is golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Sauté the Green Beans: In the same skillet, add the remaining 1 tablespoon of olive oil and the trimmed green beans. Cook for 4 to 5 minutes, stirring often, until the green beans are crisp-tender.
- Combine Chicken and Sauce: Return the cooked chicken to the skillet with the green beans. Pour the prepared honey-Sriracha sauce over the chicken and vegetables.
- Thicken the Sauce: In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Add this mixture to the skillet and stir constantly. Cook for 2 to 3 minutes until the sauce thickens and evenly coats the chicken and green beans.
- Garnish and Serve: Sprinkle the dish with sesame seeds and sliced green onions. Serve immediately, ideally paired with steamed rice, brown rice, or cauliflower rice for a complete meal.
Notes
- Adjust the amount of Sriracha to suit your preferred spice level.
- Use chicken thighs for a juicier dish or chicken breast for a leaner option.
- Add other vegetables like bell peppers, broccoli, or carrots for added nutrition and color.
- For a lower-sugar version, reduce the honey or substitute with a sugar-free alternative.
