Instructions

  1. Prepare the sauce: In a small bowl, whisk together the honey, Dijon mustard, whole grain mustard, minced garlic, lemon juice, paprika, dried thyme, salt, and black pepper until well combined.
  2. Season the chicken: Pat the chicken breasts dry with paper towels, then lightly season both sides with salt and pepper to taste.
  3. Heat the skillet: Place a large skillet over medium-high heat and add the olive oil, allowing it to heat up until shimmering but not smoking.
  4. Cook the chicken: Add the chicken breasts to the hot skillet and cook for 5 to 6 minutes on one side until golden brown. Flip and cook the other side for another 5 to 6 minutes until golden as well.
  5. Simmer with sauce: Reduce the heat to medium, then pour the honey mustard sauce over the chicken breasts in the skillet. Spoon the sauce over the chicken continuously as it simmers for 5 to 8 minutes. This will allow the flavors to meld and the chicken to cook through fully, reaching an internal temperature of 165°F (74°C).
  6. Garnish and serve: Remove the skillet from heat, garnish the chicken with chopped fresh parsley, and serve warm with your choice of sides like roasted vegetables, rice, or a fresh salad.
