  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 teaspoon dried thyme

Instructions

  1. Melt Butter and Sauté Vegetables: Melt butter in a large pot over medium heat. Add the chopped onion, sliced carrots, and celery and cook until the vegetables are softened, about 5-7 minutes.
  2. Add Flour to Create Roux: Stir in the flour with the vegetables and cook for 1 minute to eliminate the raw flour taste and begin thickening the stew.
  3. Incorporate Chicken Broth: Gradually whisk in the chicken broth, stirring continuously to create a smooth mixture without lumps.
  4. Add Potatoes and Simmer: Add the diced potatoes to the pot and bring the stew to a simmer. Cook until the potatoes are tender, approximately 15 minutes.
  5. Stir in Chicken, Milk, and Herbs: Add the shredded cooked chicken, milk, and dried thyme to the pot. Stir well to combine.
