Description
A comforting and traditional American homestyle chicken stew featuring tender shredded chicken, hearty vegetables, and a rich, savory broth. This dish is perfect for cozy family dinners and brings classic flavors together in a warm, satisfying meal.
Ingredients
Chicken and Broth
- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 1/2 cup milk
Vegetables
- 2 cups diced potatoes
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 small onion, chopped
Other Ingredients
- 2 tablespoons butter
- 2 tablespoons flour
- 1 teaspoon dried thyme
- Salt and black pepper to taste
Instructions
- Melt Butter and Sauté Vegetables: Melt butter in a large pot over medium heat. Add the chopped onion, sliced carrots, and celery and cook until the vegetables are softened, about 5-7 minutes.
- Add Flour to Create Roux: Stir in the flour with the vegetables and cook for 1 minute to eliminate the raw flour taste and begin thickening the stew.
- Incorporate Chicken Broth: Gradually whisk in the chicken broth, stirring continuously to create a smooth mixture without lumps.
- Add Potatoes and Simmer: Add the diced potatoes to the pot and bring the stew to a simmer. Cook until the potatoes are tender, approximately 15 minutes.
- Stir in Chicken, Milk, and Herbs: Add the shredded cooked chicken, milk, and dried thyme to the pot. Stir well to combine.
- Thicken and Finish Cooking: Continue to cook for 5 to 10 minutes until the stew thickens. Be careful not to let it boil after adding the milk to prevent curdling.
- Season and Serve: Season the stew with salt and black pepper according to your taste. Serve the hearty chicken stew warm for a comforting meal.
Notes
- Add peas or corn for extra vegetables to increase nutrition and color.
- Using rotisserie chicken is a convenient shortcut that saves time without sacrificing flavor.
- Do not let the stew boil after adding milk to avoid curdling and maintain a smooth texture.
