Instructions
- Activate the yeast: In a bowl, dissolve the active dry yeast and 2 tablespoons of sugar into 1 cup of warm water (about 110°F or 43°C). Let this mixture sit for 5 minutes until it becomes frothy, indicating the yeast is active.
- Prepare the dough: Add the 3 cups of all-purpose flour, 1/4 cup olive oil, and 1/2 teaspoon salt to the yeast mixture. Mix everything together until it forms a soft, slightly sticky dough.
- Knead the dough: Transfer the dough to a floured surface and knead it for about 8-10 minutes until smooth and elastic. Then place the dough in a lightly oiled bowl, cover it with a clean towel or plastic wrap, and let it rise in a warm place for 1 hour or until it doubles in size.
- Shape the dough: After the first rise, punch down the dough to release air. Press the dough evenly into a greased baking pan, about 9×13 inches, creating an even layer.
- Add the jam filling: Spoon the 1/2 cup of thick jam evenly over the surface of the dough. Gently press the jam into the dough with your fingers or the back of a spoon to create a slight impression but do not mix it in.
- Second rise: Cover the pan with a towel and let the dough rise again for 20 minutes to slightly puff up around the jam.
- Bake: Preheat the oven to 190°C (375°F). Bake the focaccia for 20 to 25 minutes until the top is golden brown and cooked through.
- Add the sugar topping: Remove the focaccia from the oven and while still warm, generously sprinkle extra granulated sugar on top to mimic the classic donut sugar coating. Alternatively, you can dust with powdered sugar for a softer finish.
- Serve and enjoy: Slice into 8 pieces and serve warm for the best texture and flavor. This focaccia is best enjoyed fresh within the same day.
