Description
A rich and creamy homemade version of classic cream of mushroom soup—perfect as a base for casseroles or a comforting bowl on its own.
Ingredients
Mushroom Soup Ingredients
- 2 cups mushrooms (sliced)
- 2 tbsp butter
- 2 tbsp flour
- 2 cups broth
- 1 cup milk or cream
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 clove garlic (minced)
Instructions
- Sauté Mushrooms: Melt butter in a saucepan over medium heat and sauté the sliced mushrooms until they become soft and lightly browned, about 5-7 minutes.
- Add Garlic: Add the minced garlic to the mushrooms and cook for about 1 minute until fragrant, making sure not to burn the garlic.
- Create Roux: Stir in the flour to the mushroom mixture and cook for 1 minute, stirring constantly to eliminate the raw flour taste and to form a roux.
- Add Broth: Gradually whisk in the broth, stirring continuously to combine and prevent lumps, until the mixture is smooth.
- Incorporate Milk or Cream: Pour in the milk or cream and bring the soup to a gentle simmer. Cook until the soup thickens to desired consistency, about 5-7 minutes, stirring occasionally to avoid sticking.
- Season: Add salt and black pepper to taste, stirring well to distribute the seasoning evenly.
- Serve: Serve the soup warm. For a smoother texture, optionally blend the soup before serving or keep it chunky based on preference.
Notes
- Blend the soup after cooking for a smoother, creamier texture or leave it chunky for a more rustic feel.
- This soup serves as a delicious base for casseroles or sauces, adding rich mushroom flavor.
