Instructions
- Prepare Vegetables: Wash all vegetables thoroughly. Cut the eggplant, zucchini, yellow squash, tomatoes, and bell peppers into bite-sized pieces. Chop the onion and mince the garlic for easy cooking.
- Sauté Onion: Heat olive oil in a large Dutch oven or heavy pot over medium heat. Add the chopped onion and cook, stirring occasionally, until softened and translucent, about 5-7 minutes.
- Add Garlic and Tomato Paste: Stir in the minced garlic and tomato paste, cooking briefly for 1-2 minutes to develop the flavors without burning the garlic.
- Cook Eggplant: Add the eggplant pieces to the pot and cook for several minutes, about 5-7 minutes, stirring occasionally, until they start to soften.
- Add Peppers, Zucchini, and Squash: Add the bell peppers, zucchini, and yellow squash to the pot, stirring to combine all vegetables evenly.
- Add Tomatoes and Herbs: Stir in the chopped tomatoes, fresh thyme (if using sprigs, include the stems now for flavor), salt, and black pepper. Mix well.
