Description

This homemade chicken lo mein features tender sliced chicken breast, chewy lo mein noodles, crisp bell peppers, cabbage, carrot, and broccoli, all tossed in a savory homemade sauce. It’s a quick and delicious Chinese-inspired stir-fry dish perfect for a satisfying weeknight dinner.

Ingredients

Main Ingredients

  • 500 g boneless, skinless chicken breast, thinly sliced
  • 300 g lo mein or egg noodles
  • 1 red bell pepper, sliced
  • 1 cup shredded cabbage
  • 1 carrot, julienned
  • 1 cup broccoli florets
  • 3 green onions, sliced
  • 2 tbsp vegetable oil
  • 3 garlic cloves, minced
  • 1 tsp fresh ginger, grated

For the Sauce

  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1/2 tsp black pepper

Instructions

  1. Cook Noodles: Cook the lo mein or egg noodles according to the package directions. Once cooked, drain well and set aside to keep warm.
  2. Make Sauce: In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, rice vinegar, honey, and black pepper until smooth and well combined. Set aside.
  3. Stir-Fry Chicken: Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the thinly sliced chicken breast and stir-fry for 4 to 5 minutes until fully cooked and lightly browned. Remove the chicken from the pan and set aside.
  4. Sauté Aromatics and Vegetables: Add the remaining tablespoon of oil to the wok or skillet. Toss in the minced garlic and grated ginger, stirring briefly until fragrant. Then add the sliced bell pepper, shredded cabbage, julienned carrot, and broccoli florets. Stir-fry the vegetables for 3 to 4 minutes until crisp-tender.
  5. Combine Ingredients: Return the cooked chicken to the pan with the vegetables. Then add the cooked noodles and pour the prepared sauce over everything.
  6. Toss and Heat Through: Toss all ingredients together over high heat for 2 to 3 minutes, ensuring the noodles, chicken, and vegetables are evenly coated with the sauce and heated through thoroughly.
  7. Finish and Serve: Garnish the dish with sliced green onions and serve immediately while hot.

Notes

  • If lo mein noodles are unavailable, substitute with spaghetti or ramen noodles.
  • Enhance the vegetable variety by adding mushrooms, snow peas, or bok choy.
  • For richer flavor and juiciness, substitute chicken breast with chicken thighs if preferred.
