- 2 refrigerated pie crusts
Filling
- 5 medium apples, peeled and diced
- ⅓ cup granulated sugar
- ¼ cup brown sugar
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- 1 tbsp cornstarch
- 1 tbsp lemon juice
Topping
- 1 egg, beaten (for egg wash)

Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it is hot enough to bake the pies evenly.
- Prepare Filling: In a large bowl, combine the peeled and diced apples with granulated sugar, brown sugar, ground cinnamon, ground nutmeg, cornstarch, and lemon juice. Mix thoroughly to coat the apples and create a spiced filling.
- Shape Pies: Roll out the refrigerated pie crusts and cut them into circles of desired size. Place a spoonful of the apple filling in the center of each circle.
- Seal Edges: Fold each pie crust circle over to enclose the filling and seal the edges by pressing with a fork to prevent filling from leaking during baking.
- Apply Egg Wash: Brush the tops of the pies with the beaten egg to give them a shiny, golden finish once baked. Optionally, sprinkle coarse sugar on top for added texture and sweetness.
