Ingredients
Steaks
- 2 ribeye, New York strip, or sirloin steaks (10–12 ounces each)
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon garlic powder
Garlic Herb Butter
- 4 tablespoons unsalted butter, softened
- 2 cloves garlic, minced
- 1 tablespoon chopped fresh parsley
- 1 teaspoon chopped fresh thyme
- 1 teaspoon chopped fresh rosemary
- ½ teaspoon lemon zest (optional)
Instructions
- Prepare Steaks: Remove the steaks from the refrigerator 30 minutes before cooking to bring them to room temperature, ensuring even cooking.
- Make Garlic Herb Butter: In a small bowl, combine softened butter, minced garlic, chopped parsley, thyme, rosemary, and lemon zest. Mix well and refrigerate until ready to use to allow flavors to meld.
- Season Steaks: Pat the steaks dry with paper towels to promote a good sear. Brush both sides lightly with olive oil, then season evenly with kosher salt, freshly ground black pepper, and garlic powder.
- Heat Cooking Surface: Preheat a grill or a cast-iron skillet over high heat until very hot to achieve a proper sear on the steaks.
- Cook Steaks: Place the steaks on the hot grill or skillet and cook for 4–5 minutes per side for medium-rare doneness, adjusting time up or down based on preferred doneness.
- Rest and Finish: Transfer the cooked steaks to a plate and top each with a generous spoonful of the prepared garlic herb butter. Allow the steaks to rest for 5–10 minutes to let juices redistribute and butter to melt fully.
Notes
- Use a meat thermometer to ensure perfect doneness; 130°F for medium-rare.
- The herb butter can be prepared up to 3 days ahead and stored in the refrigerator.
- Pair the steak with roasted potatoes, grilled asparagus, or a fresh salad for a complete meal.
