Description

These Healthy Pistachio Magnum Ice Cream Bars are a creamy, naturally sweetened frozen treat made with Greek yogurt, pistachios, and vanilla, then coated in a crisp dark chocolate shell. They provide a healthier, homemade alternative to classic ice cream bars, perfect for summer desserts and snacks.

Ingredients

Pistachio Ice Cream Filling

  • 2 cups plain Greek yogurt
  • ½ cup shelled unsalted pistachios
  • 3 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract (optional)
  • Pinch of salt

Chocolate Coating

  • 1½ cups dark chocolate chips
  • 2 tablespoons coconut oil
  • ¼ cup finely chopped pistachios

Instructions

  1. Prepare the Ice Cream Mixture: Blend the Greek yogurt, shelled pistachios, honey or maple syrup, vanilla extract, almond extract (if using), and a pinch of salt together until smooth and creamy.
  2. Fill the Ice Cream Molds: Pour the blended mixture evenly into ice cream bar molds, then insert popsicle sticks into each mold for easy handling after freezing.
  3. Freeze the Bars: Place the filled molds in the freezer and freeze for at least 6 hours or overnight until fully solidified.
  4. Melt the Chocolate Coating: Gently melt the dark chocolate chips and coconut oil together, either using a double boiler or microwave in short bursts, stirring frequently until smooth.
  5. Add Pistachios to Chocolate: Stir the finely chopped pistachios into the melted chocolate to add crunch and flavor to the coating.
  6. Coat the Frozen Bars: Remove the frozen ice cream bars from the molds carefully, then quickly dip each bar into the chocolate-pistachio coating, ensuring an even layer.
  7. Set the Chocolate Coating: Place the coated bars on a parchment-lined tray and return them to the freezer for about 10 minutes to allow the chocolate shell to harden completely.

Notes

  • For a richer flavor, use roasted unsalted pistachios instead of raw.
  • Store the finished ice cream bars in an airtight, freezer-safe container for up to 1 month to maintain freshness.
  • For a gourmet touch, drizzle extra melted dark chocolate over the bars just before serving.
