Ingredients
Crust
- 1 cup rolled oats
- 2 tbsp melted coconut oil
- 1 tbsp honey or maple syrup
Filling
- 8 oz (225 g) reduced-fat cream cheese, softened
- 1 cup plain Greek yogurt
- 2 tbsp honey or maple syrup
- 1 tsp vanilla extract
- 1 large egg
Topping
- 1 cup mixed fresh berries
- Fresh mint, for garnish (optional)
Instructions
- Preheat Oven: Preheat the oven to 350°F (175°C) to prepare for baking the crust and filling.
- Prepare Crust: In a bowl, mix the rolled oats, melted coconut oil, and 1 tablespoon honey or maple syrup until well combined. Press this mixture evenly into the bottom of a greased 8-inch springform pan to form the crust.
- Bake Crust: Bake the crust in the preheated oven for 10 minutes to set it before adding the filling.
- Make Filling: In a separate bowl, beat together the softened cream cheese, Greek yogurt, remaining 2 tablespoons honey or maple syrup, vanilla extract, and egg until smooth and creamy.
- Assemble Cheesecake: Pour the prepared filling evenly over the baked crust, spreading it carefully.
- Bake Cheesecake: Return the pan to the oven and bake for 25–30 minutes, or until the center is just set but not fully firm.
- Cool and Chill: Remove the cheesecake from the oven and let it cool completely at room temperature. Then refrigerate for at least 2 hours to allow it to firm up and flavors to meld.
- Add Toppings and Serve: Before serving, top the chilled cheesecake with mixed fresh berries and garnish with fresh mint leaves if desired.
