Ingredients

Potatoes

  • 4 medium potatoes

Filling

  • 1/2 cup Greek yogurt
  • 1/2 cup shredded cheese
  • 2 green onions, chopped
  • Salt and pepper to taste


Instructions

  1. Preheat the oven: Preheat your oven to 200°C (400°F) to prepare for baking the potatoes.
  2. Bake the potatoes: Place the whole potatoes directly on the oven rack or a baking sheet and bake for 40–45 minutes, or until the potatoes are tender when pierced with a fork.
  3. Prepare the potato skins: Remove the potatoes from the oven and allow them to cool slightly until they are safe to handle. Then, cut each potato in half lengthwise and carefully scoop out some of the flesh, leaving a thin layer attached to the skin for structural support.
  4. Make the filling: In a bowl, combine the scooped-out potato flesh with Greek yogurt, shredded cheese, chopped green onions, and salt and pepper to taste. Mix thoroughly until well blended.
  5. Stuff the potato skins: Spoon the potato mixture evenly back into each potato skin half, filling them generously.
  6. Bake again: Place the stuffed potato skins back in the oven and bake for an additional 10–15 minutes, or until the tops are golden and the cheese is melted.
  7. Serve: Remove from the oven and serve warm. Optionally, garnish with extra green onions or serve with additional Greek yogurt or sauce on the side.
