Instructions
- Preheat the grill: Preheat the grill to medium-high heat to ensure it is hot enough for the zucchini to cook quickly and develop a nice char.
- Prepare the zucchini: Slice the zucchini lengthwise into thick strips or cut into rounds to ensure they hold up well on the grill without falling apart.
- Make the marinade: In a bowl, whisk together the olive oil, minced garlic, fresh lemon juice, Italian seasoning, salt, and black pepper to create a flavorful marinade.
- Marinate the zucchini: Toss the zucchini slices with the prepared marinade until evenly coated, allowing the flavors to infuse the zucchini.
- Grill the zucchini: Place the zucchini directly on the grill grates and cook for 3–4 minutes per side, or until tender with lightly charred edges.
- Serve and garnish: Transfer the grilled zucchini to a serving platter, garnish with chopped fresh parsley and, if desired, sprinkle with grated Parmesan cheese. Serve warm.
Notes
- Don’t slice the zucchini too thin or it may become too soft while grilling.
- Add red pepper flakes for a spicy version.
- For a vegan option, simply omit the Parmesan cheese.
- Grill lemon halves alongside the zucchini and squeeze over before serving for added citrus flavor.
