Ingredients
Vegetables
- 1 medium zucchini, sliced into thick rounds
- 1 yellow squash, sliced into thick rounds
- 1 red bell pepper, cut into large pieces
- 1 yellow bell pepper, cut into large pieces
- 1 small red onion, cut into wedges
- 8 oz mushrooms, halved
- 1 cup cherry tomatoes
Seasonings & Dressing
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp balsamic vinegar
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh basil, chopped
Optional
- 2 tbsp crumbled feta
Instructions
- Preheat the Grill: Heat your grill to medium-high and lightly oil the grates to prevent sticking.
- Prepare the Vegetables: Combine zucchini, yellow squash, bell peppers, red onion, mushrooms, and cherry tomatoes in a large bowl.
- Season the Vegetables: Add olive oil, Italian seasoning, garlic powder, salt, and black pepper to the bowl. Toss well to ensure even coating on all pieces.
- Arrange on Grill: Place the vegetables directly on the grill, using a grill basket for smaller pieces and tomatoes to avoid loss through grates.
- Grill the Vegetables: Cook for 3–5 minutes per side, turning occasionally until the vegetables are tender and have light char marks.
- Transfer and Dress: Remove grilled vegetables to a serving platter, then drizzle with balsamic vinegar and sprinkle with fresh parsley and basil.
- Add Optional Topping: If desired, sprinkle crumbled feta over the vegetables for added flavor.
- Serve: Enjoy the dish warm or at room temperature as a flavorful, healthy side.
Notes
- Cut vegetables into uniform sizes to ensure even cooking.
- Use a grill basket to easily manage small vegetables and prevent them from falling through the grates.
- Add vegetables like eggplant, asparagus, corn, or broccoli for more variety.
- For a sweeter finish, substitute balsamic vinegar with balsamic glaze.
- These grilled vegetables pair perfectly with grilled chicken, steak, fish, or burgers.
