Description

Tender grilled steak is paired with a fresh corn and black bean salsa bursting with tomatoes, cilantro, lime, and avocado for a colorful, protein-packed summer meal. This vibrant dish combines smoky grilled meat with a zesty, refreshing salsa that’s perfect for warm-weather dinners or gatherings.

Ingredients

Steak

  • pounds flank steak or sirloin
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Corn & Black Bean Salsa

  • 2 cups cooked corn kernels
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • ¼ cup chopped red onion
  • ¼ cup chopped cilantro
  • Juice of 1 lime
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat Grill: Preheat the grill to medium-high heat to ensure a hot cooking surface for perfect searing of the steak.
  2. Prepare Steak: Brush the flank steak or sirloin evenly with olive oil. Season both sides with garlic powder, smoked paprika, salt, and black pepper to build a flavorful crust during grilling.
  3. Grill Steak: Place the steak on the hot grill and cook for 4 to 6 minutes per side, depending on thickness and desired doneness. Use a meat thermometer if preferred to ensure accurate cooking.
  4. Rest Steak: Remove steak from the grill and let it rest for 5 minutes. This allows the juices to redistribute, resulting in a juicy and tender steak.
  5. Make Salsa: In a large bowl, combine cooked corn kernels, rinsed black beans, halved cherry tomatoes, diced avocado, chopped red onion, chopped cilantro, lime juice, and olive oil. Gently toss to mix all ingredients well. Season with salt and pepper to taste.
  6. Slice Steak and Serve: Slice the rested steak thinly against the grain to maximize tenderness. Top with a generous scoop of the fresh corn and black bean salsa and serve immediately.

Notes

  • For extra smoky flavor, grill fresh corn on the cob before cutting kernels for the salsa.
  • This dish pairs wonderfully with a side of rice or grilled potatoes for a complete meal.
  • Leftover salsa can be enjoyed as a topping for salads or as a dip with tortilla chips.
