Ingredients
Squid and Marinade
- 1 pound cleaned squid
- 1 teaspoon minced garlic
- Salt and black pepper, to taste
- 1 tablespoon olive oil (for marinating)
Salad
- 4 cups mixed salad greens
- 1 cucumber, sliced
- 1 cup cherry tomatoes, halved
- ¼ red onion, thinly sliced
Dressing and Garnish
- 1 tablespoon lemon juice
- 1 tablespoon olive oil (for dressing)
- Fresh parsley, chopped, for garnish
Instructions
- Preheat the Grill: Preheat a grill to medium-high heat to ensure it’s hot enough for quick cooking of the squid.
- Prepare the Squid: In a bowl, toss the cleaned squid with half of the olive oil, minced garlic, salt, and black pepper. This helps infuse flavor and prevents sticking during grilling.
- Grill the Squid: Place the squid on the grill and cook for 2–3 minutes per side until just cooked through and slightly charred, taking care not to overcook to avoid toughness.
- Assemble the Salad Base: On a serving platter, arrange the mixed salad greens, sliced cucumber, halved cherry tomatoes, and thinly sliced red onion evenly.
- Slice and Add Squid: Remove the squid from the grill and slice it into bite-sized pieces, then place it over the arranged salad vegetables.
- Dress the Salad: Drizzle the remaining olive oil and freshly squeezed lemon juice over the salad for a bright, zesty finish.
- Garnish and Serve: Sprinkle chopped fresh parsley over the top and serve immediately to enjoy fresh flavors and optimal texture.
Notes
- Do not overcook the squid, as it can become tough and chewy.
- Serve with crusty bread to make the meal more filling and satisfying.
- For an extra Mediterranean touch, add olives to the salad.
