Description

This Grilled Shrimp Salad is a refreshing and healthy dish featuring juicy shrimp grilled to perfection and served atop a vibrant mix of salad greens, cherry tomatoes, cucumber, avocado, and red onion. Tossed in a zesty lemon vinaigrette, it’s an ideal light lunch or satisfying dinner that balances smoky, tangy, and creamy flavors in every bite.

Ingredients

Shrimp and Seasoning

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • Salt and black pepper, to taste

Salad

  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 avocado, sliced
  • ¼ cup red onion, thinly sliced

Lemon Vinaigrette

  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and black pepper, to taste

Instructions

  1. Season the shrimp: In a medium bowl, toss the peeled and deveined shrimp with olive oil, paprika, garlic powder, salt, and black pepper until evenly coated.
  2. Grill the shrimp: Preheat your grill to medium-high heat. Place the shrimp on the grill and cook for 2–3 minutes per side or until the shrimp turns pink and is cooked through, making sure not to overcook.
  3. Prepare the vinaigrette: In a small bowl, whisk together olive oil, fresh lemon juice, Dijon mustard, honey, salt, and black pepper until the dressing is smooth and emulsified.
  4. Assemble the salad: In a large bowl, combine mixed salad greens, halved cherry tomatoes, sliced cucumber, sliced avocado, and thinly sliced red onion.
  5. Add the shrimp and dress the salad: Top the salad with the grilled shrimp, drizzle with the lemon vinaigrette, and toss gently to coat everything evenly before serving.

Notes

  • Feta cheese makes a delicious addition if you want extra creaminess and tang.
  • Do not overcook the shrimp to keep them tender and juicy.
  • Serve immediately for the freshest flavor and best texture.
