Ingredients
Shrimp and Seasoning
- 1 pound large shrimp, peeled and deveined

Salad
- 6 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1 avocado, sliced
- ¼ cup red onion, thinly sliced
Lemon Vinaigrette
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- Salt and black pepper, to taste
Instructions
- Season the shrimp: In a medium bowl, toss the peeled and deveined shrimp with olive oil, paprika, garlic powder, salt, and black pepper until evenly coated.
- Grill the shrimp: Preheat your grill to medium-high heat. Place the shrimp on the grill and cook for 2–3 minutes per side or until the shrimp turns pink and is cooked through, making sure not to overcook.
- Prepare the vinaigrette: In a small bowl, whisk together olive oil, fresh lemon juice, Dijon mustard, honey, salt, and black pepper until the dressing is smooth and emulsified.
- Assemble the salad: In a large bowl, combine mixed salad greens, halved cherry tomatoes, sliced cucumber, sliced avocado, and thinly sliced red onion.
- Add the shrimp and dress the salad: Top the salad with the grilled shrimp, drizzle with the lemon vinaigrette, and toss gently to coat everything evenly before serving.
