Description

This Grilled Peach and Burrata Salad combines juicy caramelized peaches with creamy burrata cheese, peppery arugula, crunchy toasted nuts, and a tangy balsamic glaze. It’s an elegant and refreshing summer salad perfect as a light meal or starter, showcasing simple yet vibrant Italian-inspired flavors.

Ingredients

Fruits and Greens

  • 3 ripe peaches, halved and pitted
  • 5 ounces arugula
  • Fresh basil leaves (to taste)

Dairy

  • 8 ounces burrata cheese

Nuts & Seeds

  • ¼ cup toasted pecans or walnuts

Condiments & Oils

  • 2 tablespoons olive oil
  • 2 tablespoons balsamic glaze

Seasoning

  • Salt (to taste)
  • Freshly ground black pepper (to taste)

Instructions

  1. Preheat the Grill: Heat your grill to medium-high heat to ensure it’s hot enough to caramelize the peaches and produce beautiful grill marks.
  2. Prepare the Peaches: Brush the peach halves lightly with olive oil on both sides to prevent sticking and promote caramelization.
  3. Grill the Peaches: Place the peach halves on the grill, cooking for 2–3 minutes per side until you see distinct grill marks and the peaches soften slightly.
  4. Arrange the Salad Base: Spread the arugula evenly on a large serving platter to create a fresh, peppery bed for the salad.
  5. Add the Burrata: Tear the burrata cheese into chunks with your fingers and distribute them over the arugula for a creamy contrast to the fruit and greens.
  6. Slice and Arrange Peaches: Slice the grilled peaches into wedges and arrange them artfully around and atop the burrata.
  7. Finish with Nuts and Basil: Sprinkle the toasted nuts evenly over the salad and garnish with fresh basil leaves to add aroma and texture.
  8. Dress and Season: Drizzle the balsamic glaze across the salad, then season with salt and freshly ground black pepper to enhance all the flavors. Serve immediately for best freshness.

Notes

  • Choose peaches that are ripe but still firm to hold their shape on the grill without becoming mushy.
  • For a savory twist, add thin slices of prosciutto to the salad.
  • This salad pairs beautifully with crusty bread to soak up the delicious juices and balsamic glaze.
