Fish and Marinade

  • 4 mahi mahi fillets (about 6 ounces each)

  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano

Instructions

  1. Preheat the grill: Preheat your grill to medium-high heat to ensure it’s hot enough to sear the fish and cook it evenly without sticking.
  2. Prepare the marinade: In a small bowl, whisk together olive oil, lemon juice, minced garlic, paprika, onion powder, dried oregano, salt, and black pepper until well combined.
  3. Marinate the fish: Using a brush, generously coat both sides of each mahi mahi fillet with the marinade, allowing the flavors to penetrate the fish slightly before grilling.
  4. Grill the fillets: Place the fillets on the hot grill and cook for 4–5 minutes on each side. Cook until the fish flakes easily with a fork and has reached an internal temperature of 145°F (63°C) to ensure it’s thoroughly cooked.
  5. Rest the fish: Remove the fillets from the grill and let them rest for 2 minutes; this helps retain juices and improves texture.
  6. Garnish and serve: Sprinkle chopped fresh parsley over the grilled mahi mahi and serve with lemon wedges to add a bright citrus finish.
