Ingredients
Cheese and Vegetables
- 8 ounces halloumi cheese, cut into cubes
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 zucchini, sliced into thick rounds
- 1 small red onion, cut into wedges
Seasoning and Extras
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- ½ teaspoon paprika
- Salt and black pepper, to taste
- Wooden or metal skewers
Instructions
- Soak Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning during grilling.
- Assemble Skewers: Thread the halloumi cubes, red and yellow bell peppers, zucchini slices, and red onion wedges alternately onto the skewers for an even distribution of flavors.
- Season: Brush the assembled skewers generously with olive oil, then sprinkle evenly with dried oregano, paprika, salt, and black pepper to enhance the taste.
- Grill: Place the skewers over medium heat on a grill and cook for 8–10 minutes, turning occasionally, until the vegetables are tender and the halloumi achieves a golden-brown crust.
- Serve: Remove from the grill and serve immediately, optionally with lemon wedges for an added fresh citrus kick.
Notes
- Add cherry tomatoes or mushrooms to the skewers for extra variety and flavor.
- Halloumi cheese is naturally salty, so use salt sparingly when seasoning.
- This dish pairs wonderfully with tzatziki sauce or warm pita bread for a complete Mediterranean experience.
