Ingredients

Fish and Tortillas

  • 600 g white fish fillets, such as cod, tilapia, or mahi-mahi
  • 8 small corn tortillas
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp paprika
  • ½ tsp cumin
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 lime, cut into wedges

Mango Salsa

  • 1 large ripe mango, diced
  • ½ small red onion, finely diced
  • 1 small red bell pepper, diced
  • ¼ cup fresh cilantro, chopped
  • 1 jalapeño, finely chopped, optional
  • 2 tbsp fresh lime juice
  • ¼ tsp salt


Instructions

  1. Prepare the Fish: Pat the fish dry using paper towels and brush it evenly with olive oil to help the seasoning stick and prevent sticking to the grill.
  2. Season the Fish: In a small bowl, combine chili powder, paprika, cumin, garlic powder, salt, and black pepper. Rub this spice mixture all over the fish fillets for robust flavor.
  3. Make the Mango Salsa: In a separate bowl, mix together diced mango, finely diced red onion, red bell pepper, chopped cilantro, jalapeño if using, fresh lime juice, and salt. Set the salsa aside to let the flavors meld.
  4. Preheat the Grill: Heat your grill to medium-high heat, ensuring it’s clean and lightly oiled to prevent the fish from sticking.
  5. Grill the Fish: Place the fish fillets on the grill and cook for 3 to 4 minutes per side, depending on their thickness, until the fish flakes easily with a fork and is cooked through.
  6. Warm the Tortillas: While the fish is finishing, warm the corn tortillas on the grill for about 30 seconds on each side until pliable and slightly charred for extra flavor.
