Ingredients

Wet Ingredients

  • 1 cup plain Greek yogurt
  • 2 large eggs

  • ½ cup vanilla protein powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt

Optional

  • ½ cup blueberries or chocolate chips


Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with liners or grease it.
  2. Mix Wet Ingredients: In a medium bowl, whisk together the Greek yogurt, eggs, honey or maple syrup, and vanilla extract until smooth and well combined.
  3. Combine Dry Ingredients: In another bowl, sift or whisk together the oat flour, vanilla protein powder, baking powder, baking soda, cinnamon, and salt to evenly distribute the leavening agents and spices.
  4. Fold Ingredients: Gently fold the dry ingredients into the wet mixture until just combined. Avoid overmixing to ensure the muffins stay tender.
  5. Add Optional Mix-ins: If using, fold in the blueberries or chocolate chips evenly throughout the batter.
  6. Fill Muffin Cups: Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full to allow room for rising.
  7. Bake: Bake in the preheated oven for 18–22 minutes or until a toothpick inserted into the center of a muffin comes out clean.
