Ingredients

For the Salmon

  • 4 salmon fillets, about 6 oz (170 g) each
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lemon juice

For the Salad

  • 6 cups romaine lettuce, chopped
  • 1 cup cucumber, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives
  • 1/3 cup crumbled feta cheese
  • 1/2 cup chickpeas, drained and rinsed

Lemon Dressing

  • 1/4 cup extra-virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, minced
  • 1 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C) to prepare for baking the salmon fillets.

  4. Prepare Dressing: While the salmon is baking, whisk together extra-virgin olive oil, fresh lemon juice, Dijon mustard, minced garlic, dried oregano, salt, and black pepper to create a flavorful lemon dressing.
