Ingredients
For the Marinade
- ¼ cup extra-virgin olive oil
- Juice of 2 lemons
- 4 garlic cloves, minced
- 1 tbsp dried oregano
- 1 tsp dried thyme
- 1 tsp paprika
- 1 tsp salt
- ½ tsp black pepper
For the Kabobs
- 2 lbs (900 g) boneless, skinless chicken breasts, cut into 1½-inch cubes
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 1 zucchini, sliced into thick rounds
- Wooden or metal skewers
- Fresh parsley and lemon wedges for serving
Instructions
- Prepare the Marinade: Whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, paprika, salt, and black pepper in a bowl until well combined.
- Marinate the Chicken: Place the cubed chicken breasts into the marinade and toss to coat thoroughly. Cover and refrigerate for at least 30 minutes, or up to 8 hours to allow flavors to develop.
- Assemble the Kabobs: Thread the marinated chicken pieces and the prepared vegetables—red bell pepper, yellow bell pepper, red onion, and zucchini—alternately onto wooden or metal skewers.
- Preheat the Grill: Heat your grill to medium-high heat to ensure proper cooking and beautiful grill marks on the kabobs.
- Grill the Kabobs: Place the assembled skewers on the grill and cook for 12 to 15 minutes, turning every few minutes to cook all sides evenly. Grill until the chicken reaches an internal temperature of 165°F (74°C).
- Garnish and Serve: Remove the kabobs from the grill, garnish with freshly chopped parsley, and serve with lemon wedges for an extra burst of fresh flavor.
