Description

Grasshopper Pie is a classic no-bake dessert featuring a crisp chocolate cookie crust and a cool, creamy mint filling. Topped with whipped cream and chocolate shavings, this easy, refreshing pie is perfect for holidays or special occasions.

Ingredients

For the crust:

  • 24 chocolate sandwich cookies
  • 5 tablespoons unsalted butter, melted

For the filling:

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1/4 cup crème de menthe liqueur or 1 teaspoon mint extract plus a few drops of green food coloring
  • 1 teaspoon vanilla extract
  • 1 1/2 cups heavy cream, cold
  • 1/2 cup mini chocolate chips (optional)

For topping:

  • 1 cup whipped cream
  • 1/4 cup chocolate shavings or curls
  • 46 chocolate sandwich cookies, crushed

Instructions

  1. Prepare the crust: Crush the chocolate sandwich cookies into fine crumbs, then combine with the melted butter until evenly mixed.
  2. Form the crust: Press the cookie and butter mixture firmly into the bottom and sides of a 9-inch pie dish. Refrigerate for 20 minutes to set.
  3. Make the cream cheese base: Beat the softened cream cheese and powdered sugar together until smooth and creamy.
  4. Add flavoring: Stir in the crème de menthe liqueur and vanilla extract until well combined. If using mint extract instead, add it along with several drops of green food coloring to achieve the classic mint color.
  5. Whip the cream: In a separate bowl, whip the cold heavy cream until medium-stiff peaks form.
  6. Combine fillings: Gently fold the whipped cream into the cream cheese mixture until fully incorporated. Fold in mini chocolate chips if desired.
  7. Fill the crust: Spoon the creamy filling into the chilled crust and smooth the top for an even surface.
  8. Chill the pie: Cover and refrigerate the pie for at least 4 hours, or until firm and set.
  9. Add toppings and serve: Before serving, top the pie with whipped cream, chocolate shavings, and crushed chocolate cookies for added texture and decoration.

Notes

  • For an alcohol-free version, substitute crème de menthe with mint extract.
  • Add green food coloring to the filling to achieve the traditional grasshopper pie appearance.
  • Freeze the pie for 1–2 hours if you prefer a firmer texture before slicing.
  • Store the pie covered in the refrigerator for up to 4 days to maintain freshness.
  • If frozen, thaw the pie in the refrigerator for about 30 minutes before serving for best texture.
