Ingredients
Granola Cups
- 2 cups granola
- 2 tablespoons melted coconut oil
- 2 tablespoons honey or maple syrup
Filling & Topping
- 2 cups vanilla Greek yogurt
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1 tablespoon chia seeds (optional)
Instructions
- Prepare the Muffin Pan: Line a 12-cup muffin pan with paper liners or lightly grease it to prevent sticking.
- Make the Granola Cups: In a bowl, mix the granola with melted coconut oil and honey or maple syrup until evenly coated. Press this mixture firmly into the bottoms and up the sides of each muffin cup, forming small cups to hold the filling.
- Freeze the Granola Cups: Place the muffin pan in the freezer for 20 minutes or until the granola cups become firm and hold their shape.
- Fill with Yogurt: Remove the granola cups from the freezer and fill each with about 2 tablespoons of vanilla Greek yogurt.
- Add Toppings: Top each filled cup with mixed fresh berries and sprinkle optional chia seeds over them for added texture and nutrition.
- Freeze Again: Return the filled granola cups to the freezer and freeze for at least 2 hours to set completely.
- Serve: Before serving, let the cups sit at room temperature for 5 minutes to soften slightly for easier eating and enhanced flavor.
