Ingredients

Crust

  • 200 g digestive biscuits or graham crackers, crushed
  • 5 tbsp melted butter
  • 1 tbsp brown sugar

Filling

  • 200 g cream cheese, softened
  • 1/2 cup Greek yogurt
  • 1/3 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp fresh lemon juice
  • 1 cup whipped cream

Topping

  • 4 ripe peaches, thinly sliced
  • Fresh mint, for garnish


Instructions

  1. Prepare Crust: Crush the biscuits into fine crumbs using a food processor or by placing them in a sealed bag and crushing with a rolling pin. Mix the crumbs with melted butter and brown sugar until well combined.
  2. Form Crust Layer: Press the biscuit mixture firmly into the bottom of a serving dish or individual glasses to create an even crust layer.
  3. Make Cream Cheese Filling: In a mixing bowl, beat together the softened cream cheese, Greek yogurt, powdered sugar, vanilla extract, and fresh lemon juice until smooth and creamy.
  4. Fold in Whipped Cream: Gently fold the whipped cream into the cream cheese mixture to lighten the texture without deflating the cream.
  5. Assemble First Cream Layer: Spread or pipe a layer of the cream mixture evenly over the prepared crust.
  6. Add Peach Slices: Arrange a layer of thinly sliced peaches on top of the cream layer.
  7. Repeat Layers: If using a deeper dish, repeat the cream and peach layers as desired, finishing with a peach layer on top.
  8. Chill to Set: Refrigerate the assembled dessert for at least 2 hours to allow it to chill and set properly.
  9. Garnish and Serve: Just before serving, garnish with additional fresh peach slices and sprigs of mint for a fresh and attractive presentation.
