Ingredients

Noodles

  • 200 g lo mein noodles

Shrimp and Sauce

  • 200 g shrimp, peeled and deveined
  • 4 scallions, cut into segments
  • 3 tbsp oil (vegetable or canola)
  • 2 tbsp soy sauce
  • 1 tsp dark soy sauce
  • 1 tsp sugar
  • 1 tsp sesame oil


Instructions

  1. Cook Noodles: Cook lo mein noodles according to package instructions until al dente, then drain and set aside to prevent overcooking and sticking.
  2. Prepare Scallion Oil: Heat the 3 tablespoons of oil in a pan over low heat and add the cut scallions. Fry gently until the scallions become fragrant and infuse the oil, taking care not to burn them. Remove scallions from the oil and set them aside for garnish.
  3. Cook Shrimp: Using the same scallion-infused oil, increase the heat to medium and add the shrimp. Cook until they turn pink and are cooked through, around 2-3 minutes per side depending on size.
  4. Create Sauce: Add the soy sauce, dark soy sauce, sugar, and sesame oil directly to the pan with the shrimp. Stir to combine and heat the sauce to meld the flavors.
  5. Toss Noodles: Return the drained lo mein noodles to the pan. Toss everything together thoroughly so that the noodles are evenly coated with the shrimp and flavorful sauce.
  6. Serve: Transfer the noodles to serving plates, then top with the reserved fragrant scallions. Serve hot immediately for the best taste and texture.
