Description
Tender chicken and colorful vegetables marinated in a creamy rosemary ranch seasoning, then grilled until juicy and lightly charred. This flavorful and easy summer BBQ recipe is perfect for gatherings or a delicious weeknight dinner.
Ingredients
Chicken Marinade
- 700 g boneless, skinless chicken breast, cut into 3 cm cubes
- 1/2 cup ranch dressing
- 2 tbsp olive oil
- 1 tbsp fresh rosemary, finely chopped
- 2 garlic cloves, minced
- 1 tbsp lemon juice
- 1 tsp paprika
- Salt and black pepper, to taste
Vegetables and Skewers
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 zucchini, sliced
- 1 red onion, cut into chunks
- Wooden or metal skewers
Instructions
- Prepare the Marinade: In a bowl, combine ranch dressing, olive oil, chopped rosemary, minced garlic, lemon juice, paprika, salt, and black pepper. Mix thoroughly to create a flavorful marinade.
- Marinate Chicken: Add the cubed chicken breast to the marinade and toss until all pieces are well coated. Cover the bowl and refrigerate for at least 30 minutes, preferably 2 to 4 hours, to allow flavors to penetrate the chicken.
- Soak Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning during grilling. Metal skewers do not require soaking.
- Assemble Kabobs: Thread the marinated chicken pieces and colorful vegetable chunks alternately onto the skewers, ensuring they are not overcrowded to promote even cooking.
- Preheat Grill: Heat your grill to medium-high. This temperature helps achieve the perfect char while cooking the chicken through.
- Grill Kabobs: Place the skewers on the grill and cook for 4 to 5 minutes per side. Turn regularly to get an even char and avoid burning. Continue grilling until the chicken reaches an internal temperature of 74°C (165°F).
- Rest and Serve: Remove the kabobs from the grill and let them rest for 5 minutes before serving. This allows juices to redistribute, making the chicken juicy and tender.
Notes
- Do not overcrowd the skewers; leave some space between pieces for even cooking.
- Feel free to add mushrooms or cherry tomatoes to the skewers for additional flavor and variety.
- Chicken thighs can be used instead of chicken breast for a juicier kabob.
- Serve these kabobs with rice, grilled pita bread, or a fresh green salad for a complete meal.
