Ingredients

Chicken Marinade

  • 700 g boneless, skinless chicken breast, cut into 3 cm cubes
  • 1/2 cup ranch dressing
  • 2 tbsp olive oil
  • 1 tbsp fresh rosemary, finely chopped
  • 2 garlic cloves, minced
  • 1 tbsp lemon juice
  • 1 tsp paprika
  • Salt and black pepper, to taste

Vegetables and Skewers

  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 zucchini, sliced
  • 1 red onion, cut into chunks
  • Wooden or metal skewers


Instructions

  1. Prepare the Marinade: In a bowl, combine ranch dressing, olive oil, chopped rosemary, minced garlic, lemon juice, paprika, salt, and black pepper. Mix thoroughly to create a flavorful marinade.
  2. Marinate Chicken: Add the cubed chicken breast to the marinade and toss until all pieces are well coated. Cover the bowl and refrigerate for at least 30 minutes, preferably 2 to 4 hours, to allow flavors to penetrate the chicken.
  3. Soak Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning during grilling. Metal skewers do not require soaking.
  4. Assemble Kabobs: Thread the marinated chicken pieces and colorful vegetable chunks alternately onto the skewers, ensuring they are not overcrowded to promote even cooking.
  5. Preheat Grill: Heat your grill to medium-high. This temperature helps achieve the perfect char while cooking the chicken through.
  6. Grill Kabobs: Place the skewers on the grill and cook for 4 to 5 minutes per side. Turn regularly to get an even char and avoid burning. Continue grilling until the chicken reaches an internal temperature of 74°C (165°F).
  7. Rest and Serve: Remove the kabobs from the grill and let them rest for 5 minutes before serving. This allows juices to redistribute, making the chicken juicy and tender.
