Description

Ingredients

Rice and Oil

  • 4 cups cooked and chilled rice
  • 2 tablespoons sesame oil

Vegetables and Seasonings

  • 2 garlic cloves, minced
  • 1 teaspoon grated fresh ginger
  • 1 cup carrots, diced
  • 1 cup broccoli florets, chopped
  • 1 cup peas
  • 1 red bell pepper, diced
  • 3 green onions, sliced

Sauces and Extras

  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 2 eggs, beaten (optional)
  • Salt and black pepper, to taste
  • Sesame seeds, for garnish


Instructions

  1. Heat oil and sauté aromatics: Heat sesame oil in a large skillet or wok over medium-high heat until shimmering. Add the minced garlic and grated fresh ginger, cooking for about 30 seconds until fragrant.
  2. Cook the vegetables: Add diced carrots, chopped broccoli florets, and diced red bell pepper to the skillet. Stir-fry for 4 to 5 minutes until the vegetables begin to soften but still have some crunch.
  3. Add peas and green onions: Stir in the peas and sliced green onions, mixing them evenly with the other vegetables.
  4. Scramble the eggs (optional): Push the vegetables to one side of the skillet. Pour the beaten eggs into the cleared side and scramble until fully cooked, then mix with the vegetables.
  5. Add rice and sauces: Add the chilled cooked rice to the skillet, breaking up any clumps. Pour in the soy sauce and oyster sauce (if using), then toss everything together thoroughly to combine and heat through, about 3 to 4 minutes.
  6. Season and serve: Taste the fried rice and season with salt and black pepper as desired. Garnish with sesame seeds and serve immediately while hot.

Notes

  • Day-old rice gives the best texture for fried rice as it’s less sticky and fries better.
  • You can add tofu, chicken, or shrimp for extra protein if desired.
  • Use tamari instead of soy sauce for a gluten-free version.
