Description

A creamy and comforting slow cooker chicken pasta dish featuring tender chicken breasts simmered in a rich mushroom sauce, enhanced with Italian seasoning and cream cheese, served warm over delicate angel hair pasta.

Ingredients

Protein

  • 4 chicken breasts

Liquids and Soup

  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup chicken broth

Seasonings

  • 1 package (1 oz) Italian dressing mix

Dairy

  • 8 oz cream cheese, softened

Pasta

  • 12 oz angel hair pasta, cooked according to package instructions

Instructions

  1. Prepare the slow cooker: Place the chicken breasts in the bottom of the slow cooker. Pour the cream of mushroom soup, chicken broth, and Italian dressing mix over the chicken, spreading the ingredients evenly.
  2. Slow cook the chicken: Cover and cook on Low for 6 hours or on High for 3 to 4 hours until the chicken is fully cooked and tender.
  3. Add and blend cream cheese: Remove the lid and add the softened cream cheese to the slow cooker. Stir thoroughly until the cream cheese is fully melted and the sauce is smooth and creamy.
  4. Cook pasta and serve: Meanwhile, cook the angel hair pasta according to package directions until al dente. Drain and divide the pasta onto plates, then spoon the creamy chicken and mushroom sauce over the top to serve.

Notes

  • You can substitute cream of mushroom soup with cream of chicken soup for a slightly different flavor.
  • If the sauce is too thick after adding cream cheese, stir in a little extra chicken broth to reach desired consistency.
  • To add vegetables, try stirring in sautéed mushrooms or spinach before serving.
  • Leftovers keep well in the refrigerator for up to 3 days and can be reheated gently on the stovetop or microwave.
