Description

These Easy Potato Fritters are crispy on the outside and tender on the inside, made from simple pantry staples like grated potatoes, onion, egg, and seasonings. Pan-fried to a golden crisp, they make a perfect breakfast, brunch, side dish, or quick snack for the whole family.

Ingredients

Potato Mixture

  • 4 medium russet potatoes, peeled and grated
  • ½ small yellow onion, grated
  • 1 large egg
  • ¼ cup all-purpose flour
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

For Frying

  • ¼ cup vegetable oil, for frying

Instructions

  1. Prepare the Potatoes: Grate the potatoes and place them in a clean kitchen towel. Squeeze firmly to remove as much excess moisture as possible to ensure crisp fritters.
  2. Combine Ingredients: Place the grated potatoes and onion in a large bowl. Add the egg, flour, Parmesan cheese, garlic powder, paprika, salt, pepper, and chopped parsley. Mix everything together until well combined.
  3. Heat Oil: Heat the vegetable oil in a large skillet over medium heat until shimmering and hot enough for frying.
  4. Form and Fry Fritters: Scoop about ¼ cup of the potato mixture for each fritter into the skillet. Flatten each gently with the back of a spoon to form patties.
  5. Cook Each Side: Fry the fritters for 3 to 4 minutes on each side, or until they turn golden brown and crispy.
  6. Drain Excess Oil: Transfer the cooked fritters to a paper towel-lined plate to drain off excess oil.
  7. Repeat: Continue cooking the remaining potato mixture in batches, adding more oil to the skillet if needed to maintain frying temperature.
  8. Serve: Serve the fritters warm alongside sour cream, Greek yogurt, applesauce, or your favorite dipping sauce.

Notes

  • Removing as much moisture as possible from the grated potatoes is crucial for achieving a crispy texture.
  • Don’t overcrowd the skillet; cook the fritters in batches to maintain proper frying temperature and crispiness.
  • For extra flavor, consider adding chopped green onions, fresh chives, or shredded cheddar cheese to the batter.
  • You can make smaller fritters if you’d like a kid-friendly appetizer or snack portion.
  • Serve the fritters immediately for the best crisp texture and flavor.
