- 2 pounds boneless, skinless chicken thighs
Teriyaki Marinade & Sauce
- ⅓ cup low-sodium soy sauce
- 2 tablespoons honey
- 2 tablespoons brown sugar
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 teaspoon cornstarch mixed with 1 tablespoon water (slurry)

Instructions
- Prepare the Marinade: In a bowl, whisk together the soy sauce, honey, brown sugar, rice vinegar, sesame oil, minced garlic, and grated ginger until the sugar is dissolved and the mixture is well combined.
- Marinate the Chicken: Place the boneless, skinless chicken thighs in a shallow dish or resealable bag, and pour the marinade over them. Ensure the chicken is fully coated, then refrigerate and let it marinate for at least 30 minutes to absorb the flavors.
- Grill the Chicken: Preheat your grill to medium heat. Remove the chicken from the marinade, reserving the marinade for later. Grill the chicken thighs for 6 to 7 minutes on each side, or until they reach an internal temperature of 165°F (75°C) and are cooked through, with beautiful grill marks.
- Make the Teriyaki Sauce: While the chicken is cooking, pour the reserved marinade into a small saucepan. Bring it to a simmer over medium heat. Stir in the cornstarch slurry and continue to cook, stirring constantly, until the sauce thickens to a glaze-like consistency. Remove from heat.
- Glaze and Garnish: Brush the thickened teriyaki sauce generously over the grilled chicken thighs. Sprinkle with sesame seeds and sliced green onions for garnish before serving.
Notes
- For a different cooking method, try baking the chicken thighs in an oven at 400°F (200°C) for 20-25 minutes.
- You can also use an air fryer set to 375°F (190°C) for about 15 minutes, flipping halfway through.
- Serve with steamed broccoli and jasmine or brown rice for a complete meal.
- Marinating longer than 30 minutes, up to overnight, will intensify the flavor and tenderness.
