Ingredients

For the Greek Chicken

For the Bowls

  • 3 cups cooked white or brown rice
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • Lemon wedges, for serving

Tzatziki Sauce

  • 1 cup plain Greek yogurt
  • 1/2 cucumber, finely grated and squeezed dry
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh dill, chopped
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Marinate the Chicken: In a large bowl, combine the chicken pieces with olive oil, fresh lemon juice, minced garlic, dried oregano, paprika, ground cumin, salt, and black pepper. Toss thoroughly to coat all pieces and let the mixture marinate for at least 15 minutes to develop flavor.
  2. Prepare the Tzatziki Sauce: While the chicken marinates, mix together the Greek yogurt, finely grated and drained cucumber, lemon juice, fresh dill, minced garlic, olive oil, salt, and black pepper in a bowl. Stir well and refrigerate to let the flavors meld until you’re ready to serve.
