Description

Easy Chicken Gyros are a delicious Mediterranean-inspired dish featuring juicy, seasoned chicken, warm pita bread, fresh crisp vegetables, and creamy tzatziki sauce. Perfect for a quick lunch or dinner, this recipe combines bold flavors and simple ingredients for a satisfying meal.

Ingredients

For the Chicken Marinade

  • 1 ½ lbs boneless, skinless chicken thighs or breasts
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • ½ tsp ground cumin
  • ½ tsp salt
  • ¼ tsp black pepper

For the Gyros Assembly

  • 4–6 pita breads
  • 1 cup chopped lettuce
  • 1 tomato, diced
  • ½ cucumber, sliced
  • ½ small red onion, thinly sliced
  • ½ cup tzatziki sauce
  • Fresh parsley, for garnish

Instructions

  1. Prepare the Marinade: In a bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, paprika, ground cumin, salt, and black pepper until evenly mixed.
  2. Marinate the Chicken: Add the chicken thighs or breasts to the marinade and toss well to ensure all pieces are coated. Allow the chicken to marinate for at least 15 minutes to soak up the flavors.
  3. Cook the Chicken: Heat a large skillet or grill pan over medium-high heat. Cook the marinated chicken for 5 to 7 minutes on each side, depending on the thickness, until the chicken is golden brown and fully cooked through.
  4. Rest and Slice the Chicken: Remove the chicken from the heat and let it rest for 5 minutes to retain juices. Then slice the chicken into thin strips suitable for stuffing the pita bread.
  5. Warm the Pita Breads: Heat the pita breads in a skillet or microwave until warm and pliable, making them ready for assembling the gyros.
  6. Assemble the Gyros: Fill each warmed pita with sliced chicken, chopped lettuce, diced tomato, sliced cucumber, and thinly sliced red onion.
  7. Add Tzatziki and Garnish: Drizzle each gyro generously with creamy tzatziki sauce and garnish with fresh parsley for added color and flavor.
  8. Serve: Serve the assembled chicken gyros immediately while warm for the best taste and texture.

Notes

  • Chicken thighs provide more moisture and stay especially juicy, but chicken breasts work well too.
  • For extra Mediterranean flavor, consider adding crumbled feta cheese, kalamata olives, or pickled onions to your gyros.
  • Marinating the chicken longer, up to a few hours, can enhance the flavor even more.
  • Adjust seasoning to taste if desired, especially the salt and spices.
