Ingredients

Salmon

  • 4 salmon fillets, about 5–6 oz (140170 g) each
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 1/2 teaspoon dried Italian seasoning
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • Lemon wedges, for serving
  • Fresh parsley, for garnish

Vegetables

  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 small zucchini, sliced
  • 1/2 tablespoon olive oil
  • 1 garlic clove, minced
  • 1/2 teaspoon dried Italian seasoning
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper


Instructions

  1. Preheat the air fryer: Set your air fryer to 400°F (200°C) to ensure it’s hot and ready for cooking the salmon and vegetables.
  2. Prepare the vegetables: In a mixing bowl, toss the broccoli florets, sliced red bell pepper, and zucchini with half of the olive oil, minced garlic, dried Italian seasoning, paprika, salt, and black pepper until vegetables are evenly coated.
  3. Cook the vegetables: Place the seasoned vegetables in the air fryer basket and cook for 5 minutes to start softening them.
  4. Season the salmon: Brush the salmon fillets with the remaining olive oil, then sprinkle the remaining minced garlic, dried Italian seasoning, paprika, salt, and black pepper over the fillets to season them well.
  5. Add salmon to air fryer basket: Place the seasoned salmon fillets on top of the partially cooked vegetables in the air fryer basket.
  6. Air fry salmon and vegetables together: Cook for another 8–10 minutes, adjusting time depending on the thickness of the salmon, until the salmon is tender and cooked through.
