Description
A rich and hearty Irish-inspired stew featuring tender beef, root vegetables, and the deep, robust flavor of Guinness beer. Perfectly cooked to develop comforting, soulful flavors either in a Dutch oven or slow cooker, making it an ideal meal for cozy gatherings or a satisfying family dinner.
Ingredients
Beef and Vegetables
- 1 lb (450g) beef, cubed
- 2 cups potatoes, diced
- 1 carrot, sliced
- 1 small onion, chopped
- 2 cloves garlic, minced
Liquids and Flavorings
- 1 cup Guinness beer
- 2 cups beef broth
- 1 tbsp tomato paste
- 1 tbsp olive oil
- Salt and pepper to taste
- Optional: thyme or bay leaf
Instructions
- Brown the beef: Heat olive oil in a Dutch oven over medium-high heat and brown the cubed beef in batches to ensure even caramelization, which enhances the stew’s depth of flavor. Remove browned beef and set aside.
- Sauté aromatics: In the same pot, add chopped onion and minced garlic, sautéing until the onion becomes translucent and fragrant, about 3-4 minutes.
- Add tomato paste and deglaze: Stir in tomato paste to coat the aromatics, cooking for 1 minute. Then pour in Guinness beer and beef broth, scraping up any browned bits from the bottom of the pot to incorporate all the rich flavors.
- Combine ingredients and season: Return the browned beef to the pot, add diced potatoes and sliced carrot. Season with salt, pepper, and optionally add thyme or a bay leaf for aromatic complexity.
- Simmer in Dutch oven: Cover and let simmer on low heat for 1.5 to 2 hours, stirring occasionally until the beef is tender and the vegetables are cooked through.
- Slow cooker alternative: Optionally brown beef in a skillet. Transfer all ingredients to the slow cooker and cook on low for 6 to 8 hours or high for 3 to 4 hours to achieve the same tender, flavorful stew.
- Final touches: Remove herbs if used, taste and adjust seasoning as needed. The stew will thicken naturally as it cooks.
- Serve: Ladle stew into bowls and enjoy with crusty bread for dipping.
Notes
- Stew naturally thickens during cooking, no additional thickener necessary.
- For more depth, deglaze with beer in the Dutch oven method to capture all flavor.
- Optional herbs like thyme or bay leaf enhance aroma but can be omitted if unavailable.
- Brown the beef before slow cooking for improved texture and flavor.
- Serve with crusty bread or over mashed potatoes for a heartier meal.
