Peanut Sauce
- 1/2 cup peanut butter
- 1/2 cup coconut milk
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 tablespoon brown sugar
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
Instructions
- Prepare the Chicken: Heat the oil in a pan over medium heat and add the sliced chicken breasts. Cook until the chicken is lightly browned on all sides, about 5-7 minutes.
- Sauté Aromatics: Add the minced garlic and grated ginger to the pan with the chicken. Sauté briefly for about 1-2 minutes until fragrant, stirring continuously to avoid burning.
- Mix the Sauce: In a separate bowl, combine the peanut butter, coconut milk, soy sauce, lime juice, and brown sugar. Whisk together until smooth and well blended.
- Add Sauce to Pan: Pour the peanut sauce mixture into the pan with the chicken and aromatics. Stir well to coat the chicken evenly.
- Simmer: Reduce the heat to low and let the sauce simmer gently for about 8-10 minutes, stirring occasionally until the sauce thickens and the chicken is cooked through.
- Serve: Remove from heat and serve the Thai peanut chicken hot, preferably with steamed rice or noodles for a complete meal.
Notes
- Add chili paste or fresh chopped chili for extra heat if desired.
