Peanut Sauce

  • 1/2 cup peanut butter
  • 1/2 cup coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated


Instructions

  1. Prepare the Chicken: Heat the oil in a pan over medium heat and add the sliced chicken breasts. Cook until the chicken is lightly browned on all sides, about 5-7 minutes.
  2. Sauté Aromatics: Add the minced garlic and grated ginger to the pan with the chicken. Sauté briefly for about 1-2 minutes until fragrant, stirring continuously to avoid burning.
  3. Mix the Sauce: In a separate bowl, combine the peanut butter, coconut milk, soy sauce, lime juice, and brown sugar. Whisk together until smooth and well blended.
  4. Add Sauce to Pan: Pour the peanut sauce mixture into the pan with the chicken and aromatics. Stir well to coat the chicken evenly.
  5. Simmer: Reduce the heat to low and let the sauce simmer gently for about 8-10 minutes, stirring occasionally until the sauce thickens and the chicken is cooked through.
  6. Serve: Remove from heat and serve the Thai peanut chicken hot, preferably with steamed rice or noodles for a complete meal.
