Description

This Delicious Sofritas Chipotle recipe features crumbled extra-firm tofu simmered in a smoky, spicy tomato and chipotle sauce. It is a flavorful, plant-based filling perfect for burritos, tacos, bowls, salads, and meal prep, offering a vibrant Mexican-inspired vegan dish with a rich depth of smoky heat and bold spices.

Ingredients

Tofu Mixture

  • 14 oz (400 g) extra-firm tofu, pressed and crumbled
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 small onion, chopped

Chipotle Sauce

  • 2 chipotle peppers in adobo sauce
  • 2 tablespoons adobo sauce
  • 2 tablespoons tomato paste
  • ½ cup vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice

Instructions

  1. Heat olive oil: Warm the olive oil in a skillet over medium heat to prepare for sautéing the vegetables.
  2. Sauté onion and garlic: Add the chopped onion to the skillet and cook until softened, about 3-5 minutes, then add the minced garlic and sauté for another minute until fragrant.
  3. Prepare chipotle sauce: In a blender, combine the chipotle peppers, adobo sauce, tomato paste, vegetable broth, cumin, smoked paprika, oregano, soy sauce, and lime juice. Blend until the sauce is smooth and evenly combined.
  4. Add tofu: Stir the crumbled tofu into the skillet with the sautéed onion and garlic, mixing well to combine.
  5. Simmer with sauce: Pour the blended chipotle sauce over the tofu mixture, stirring thoroughly so that the tofu is fully coated with the sauce.
  6. Cook to reduce liquid: Let the mixture simmer on medium-low heat for 15 to 20 minutes, stirring occasionally, until the sauce thickens and reduces, infusing the tofu with smoky, spicy flavors.
  7. Serve: Use the finished sofritas as a filling for burritos, tacos, bowls, or salads for a delicious plant-based meal.

Notes

  • Press the tofu well to remove excess moisture for the best texture and flavor absorption.
  • Adjust the number of chipotle peppers to reduce the spice level if desired.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
