Ingredients

Chicken and Seasoning

  • 2 lbs (900 g) boneless, skinless chicken breasts or thighs
  • 1 teaspoon paprika

  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

  • 1 cup barbecue sauce
  • ½ cup chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon apple cider vinegar


Instructions

  1. Season the Chicken: In a small bowl, mix paprika, garlic powder, onion powder, smoked paprika, chili powder, salt, and black pepper. Rub this spice blend evenly over the chicken breasts or thighs to coat thoroughly.
  2. Brown the Chicken: Heat the olive oil in a large skillet over medium heat, or prepare your slow cooker insert. Lightly brown the chicken pieces on all sides for about 3-4 minutes per side until a golden crust forms, enhancing flavor.
  3. Add Sauce and Liquids: Pour in the barbecue sauce, chicken broth, Worcestershire sauce, brown sugar, and apple cider vinegar over the browned chicken in the skillet or slow cooker.
  4. Simmer or Slow Cook: If using the stovetop, reduce heat to low, cover, and simmer the chicken for 25–30 minutes until it is tender and cooked through. If using a slow cooker, cover and cook on LOW for 4–5 hours until chicken is very tender and shreds easily.
  5. Shred the Chicken: Remove the chicken from the cooking vessel and use two forks to shred the meat into bite-sized pieces.
